Today is National Carb Awareness Day.
It seems that there’s always a Bad Thing that, if we can just avoid eating it, will magically make us healthy, wealthy, and wise. Sugar, fat, cholesteral, sodium: there only ever seems to be room for one at a time in the public memory. Watching Au Bon Pain whip their ad campaign away from trans-fatty acids to low carbs was pretty darned amazing.
And right now it’s carbohydrates. I like foods high in carbohydrates, and am saddened in the way that a man who was used to eat 6 eggs every morning for breakfast was saddened by the “Egg Bad” movement of my childhood.
I’m not alone in my thinking.
And so to bread.

Ah yes, but what goes around comes around, all things old become new again…….time takes care of it all.
